The Brewery

Chilton Mill Brewing is a Brewer Owned and Operated 3.5 bbl craft brewery and taproom.

Behind Our Name: In the rural town of Clare, Suffolk County, England stood a five-storied, four-sailed, brick gristmill called the Chilton Street Mill where nearby, the cool waters of Chilton Stream ran fresh and fed the Stour River. It was there amid the vast and picturesque grain fields that the Chilton Street Mill functioned as a valuable source of the community’s commerce. Although no longer in service, it still stands to this day.

Finding origins of his own surname in that same Suffolk, England, the spinning hand of Fate placed Head Brewer and Owner, Mike Peachey, in a hilltop home on his own Chilton Street in Somerset County, New Jersey where he discovered his passion and started crafting and brewing his own recipes. Later, moving to New Hampshire he became immersed in the craft, while gaining knowledge from friends and brewers alike. All while holding tight to his dream of opening his very own brewery.

Repose - Kellerbier: 5% A historical, unfiltered lager with notes of fresh hay, earthy noble hops, bready malt and a whisper of lemon. Brewed with German Pilsner and Vienna malts, gently fermented and patiently conditioned. Repose pours a soft straw gold and offers a quiet, timeless expression of classic lager brewing

Long Valley Common: 4.9% Brewed in collaboration with Steve Ashton, this revival of a nearly lost American classic pours deep amber with notes of sweet corn, light caramel & earthy citrus. Smooth, clean and lagered for a crisp, easy finish

Daydream - Hazy Pale Ale: 5.8% Crisp, clean pilsner malt sets the stage for Citra, Rakau & Mosaic hops to push forth flavors of apricot, mango and citrus zest in this easy drinking ale

Cherry Splash - Fruit Tart Ale: 6.5% A splash of tart red cherries pair perfectly with perky peaches in this succulently sweet & sour ale

Everything Delightful - IPA: 7.6% Brewed in collaboration with Muckraker Beermaker, this heavily oated IPA bursts with flavors of ripe peach, nectarine and pineapple punch thanks to Peacharine, Superdelic & Nectaorn hops!

Spruce Ridge - West Coast IPA: 6.9% Colorado Spruce tips create a brilliantly balanced bitterness, pairing perfectly with Chinook & Citra hops, while Seasonal aromatics of fresh cut spruce and candied citrus jumps out of the glass and onto your tastebuds!

Choltonator - Doppelbock: 8.2% Extended lager fermentation brings depth and balance, resulting in a complex yet surprisingly smooth and drinkable Doppelbock. Deep garnet in color, Choltonator delivers a rich, malty backbone while gentle chocolate notes melt into dark fruit flavors

Aurum - Belgian Golden Strong: 9.3% Effervescent and deceptively crisp, this Belgian Golden Strong Ale showcases layered fruity esters, subtle warmth and an elegant noble hop finish
