The Brewery

Chilton Mill Brewing is a Brewer Owned and Operated 3.5 bbl craft brewery and taproom.

Behind Our Name: In the rural town of Clare, Suffolk County, England stood a five-storied, four-sailed, brick gristmill called the Chilton Street Mill where nearby, the cool waters of Chilton Stream ran fresh and fed the Stour River. It was there amid the vast and picturesque grain fields that the Chilton Street Mill functioned as a valuable source of the community’s commerce. Although no longer in service, it still stands to this day.

Finding origins of his own surname in that same Suffolk, England, the spinning hand of Fate placed Head Brewer and Owner, Mike Peachey, in a hilltop home on his own Chilton Street in Somerset County, New Jersey where he discovered his passion and started crafting and brewing his own recipes. Later, moving to New Hampshire he became immersed in the craft, while gaining knowledge from friends and brewers alike. All while holding tight to his dream of opening his very own brewery.

Rooster - American Wheat: 5.6% ABV A beautiful blend of American 2-Row and white wheat provides a smooth body and subtle sweetness, complimented by refreshingly citrusy undertones.

Papa Don - British Brown Ale: 5.6% ABV Brewed in collaboration with award winning Brewer, Chris LaSpada. This classic English ale showcases layers of chocolate, biscuit and toffee, while paying homage to his late Grandfather

Raspberry-Peach - Fruit Tart Ale: 7% ABV Tart tangy raspberries meet their match in ripe juicy peaches, seamlessly blending between sour and sweet

Chateau St. Miguel 2025 - Saison Rosé: 7.2% ABV A unique wine/beer hybrid consisting of 2022 Napa Rosé of Malbec, alongside black currants. Elegantly paired with a semi-dry, effervescent French Saison yeast strain. Loral hops add a backdrop of floral and citrus aromas, allowing this beer to embody the spirit of a bright fruit forward Rosé and classically clean saison all in one!

Thermal Lift - IPA: 7% ABV Funky flavors of fresh squeezed stone fruit and citrus rise from the glass, while tantalizingly tropical waves wash over your tastebuds. All thanks to ample amounts of Cyro-Krush, Freestyle Motueka & Citra

Time Wave - IPA: 7% A dynamic trio of Nelson Sauvin, Rakau & Simcoe hops provide notes of apricot, white grape and soft tropical tones with a pulse of pine

Amidst The Pines - West Coast IPA: 7.3% ABV This West Coast IPA stands tall with a bold balanced bitterness alongside enticing aromatics. Flavors of fresh cut pine, and sweet citrus are derived from heavy doses of Columbus, Chinook, Simcoe & Citra hash!

Couples Retreat – TIPA: 9% ABV Citra and Galaxy hops take a well-deserved getaway, discovering their perfect harmony in this intensely hoppy Imperial IPA. Expect smooth bitterness layered with big juicy notes of passion fruit, tangelo and pineapple! A flavor-packed escape in every sip!
